Two weeks ago my laptop died. RIP. So I went on for a week without a computer on my own, wishing I had enough money to get a mac. I was settled on getting a PC that Sunday, but Windows 7 was coming out and I wouldn't be able to get a computer until Thursdays. THE BASTARDS. I could not get a pc anywhere. So I lumbered thought the week, spending a ton of time on campus trying to get my homework done. So, on the 23rd I went to Best Buy to look at the laptops there, and I checked out the warranty prices. For the three year black tie warranty, it was, like, $300. Coupled with the fact that I wanted a laptop with 4 GB ram and 500 MB hard drive at the least, it was getting close to how much an iMac cost. So I said, fuck it and got the Mac. It was the best decision of my life! I am in love!
I also brought iWorks, which I find very easy to use. GarageBand and Photobooth keeps me thoroughly entertained as well. I just love it. And the wireless keyboard and mouse is amazing. I just hope that I don't have to buy a ton of batteries for them though. So far, the mouse is holding up, and the keyboard is too.

Lately, I have had little time for myself. I am so worn out. I know that I shouldn't complain. I did it to myself. No one held a gun to my head and told me take 18 credits this semester. I'm trying to look on the bright side of things. My former TV Broadcasting prof thought high enough of me to ask me to be her TA. I was happy to oblige. My advisor thought I needed to be more involved with the student newspaper, and so I decided to do graphics this year. Before these additions, I had 14 credits. I know I could manage that, but now with the TV broadcasting prof gone and a substitue in, I have been doing more work that I thought I would. It seems that I am going to have to change my work schedule so that can get my homework done.

A little background info: I am a bit of a vampire fan. Not crazy screaming fan of any one particular vampire character. Just a fan of the genre.
I have not yet seen the first season but I've just gone through the second season on OnDemand. Eric (or as I think it should be spelled, Erik) is the bad boy but whoa! Hotness! And I don't usually go for blondes!
The "hero" vamp is Bill and he just doesn't do it for me. I think the makeup department doesn't do him any favors. His skin looks rough, dry and scratchy most of the time and his hair looks brittle. I'm pretty sure someone in power on the set REALLY doesn't like the actor.
BUT they have the hots for Eric (Alex Skarsgard) cuz he is just smoldering in almost every scene. (I was a bit disturbed to see him wearing a dress for a "hallucination" scene but that is not the scene that keeps replaying in my head.)
I am a total sucker for a bad boy's tender smile. It's my kryptonite!
If you could be fluent in any language (that you don't currently read or speak), which one would it be?
I'd love to be able to speak Arabic so can understand the music I like to listen to and feel more confident in restaurants and little shops near my hometown.
But then again I also think Italian and Turkish are incredibly sexy languages so those would be cool too. What? you don't believe me on the sexy turkish deal?

I guess it'd be a good idea to write a smidge about myself as a sort of intro. I am just a gal who should be doing about a thousand other things like cleaning my house, folding laundry, knitting on my many WIPs, spinning, cleaning the fish, bathing the dog, bathing the kids, etc...
What the heck am I doing starting a blog? No idea! Just got a wild hair. I guess I like to play with new toys and tinker around. That is the very urge that gets me into trouble but occasionally I just can't stop myself from indulging. I guess this blogging thing should be rather cost effective which is more than can be said about more that one of my endeavors so WTH!
I guess it can be said that I am a completely informal person. I hate dressing up to go over someone's house for dinner. I don't mind dressing up to go out but if I am just going to be sitting on a couch or helping out in the kitchen, I'd rather be comfortable.
I'll write more random drivel later as the kiddos are clamoring for my attention right now so I (as the authority figure in the house) must obey.
Who is the most famous person you've ever met?
I'd have to say the MOST famous person I ever met was Chuck Norris and his family. It was nothing glorious I just waited on them when I was working at On the Border in Addison, TX. He barely said a word to me and she did all of the talking. They were a pleasure to wait on unlike...
Michael Irvine of the Dallas Cowboys (while he was still on the team). From the very first moment I walked up to his table he pulled out his hand to shake mine and said, "Hi, I'm Michael Irvine". My reply was stated matching his tone, Hi, I'm Beki. I'll be your server. Can I start you off with some drinks? or some BS like that. He then ran me ragged the whole time. When he pretended that he was unable to find his wallet as I presented the bill, I feigned relief and told him the dishwasher would be glad for the help. The manager on duty (a HUGE Cowboy fan) didn't think it was so funny but the ticket was paid and none of the three Cowboy players sitting at the table filed a complaint so all was well.
However, I never met the guy but... Dr. Kevorkian called my father a nazi bastard on court TV. My dad laughed and formally arrested him after his trial.
There were a few other brushes with the people in the headlines and tabloids but I think that's more than enough name dropping for now.
Thrusday, I turned in my intro to photoshop final project and got to talk a bit with my prof. He was wondering how I was doing, and I told him about how stressful this summer was with everything that was going on with my family. He told me to try not to stress to much because most likely my arm (which was completely defunct the last time he saw me) might give me trouble again. He asked me if I was living on campus this year. I told him no. He didn't say it directly, but I knew what he was getting at. My home life is not good for me. It's too stressful, and the best thing for me was to not live at home. He has an understated way of saying things, but he makes himself clear.
He's right though. I've known if for ages. I wanted to go to university across state for that reason. I didn't, but I still desire to move a way from my folks. I thought about cities I would like to live in. I wanted a place that was conducive to creativity and was progressive. I wanted to live in a place where there was a good public transportation system (both light rail and busing [since I don't drive]) and was relatively cheap. I like rain, a tiny bit of snow, and mild, dry summers. So then I thought about Portland, OR. From what I heard, the things I listed apply to Portland, and it's a pretty sizeable city without it being too big, which is another thing I like. It's not to far away from my folks, but it is far enough.
So, if any of you guys out there live in Portland or have visited, tell me about what it's like there and if you like it or not.
What household chore do you hate the most? What's your favorite?
I hate vacuuming! That noise makes me want to climb the walls. Maybe I'm part cat.... :) I think it would feel like torture if I had to vacuum for a long time at once. Perhaps that is part of the reason I would like a house with hardwood flooring. Cleaning the bathroom is a very close second.
I don't really enjoy cleaning, but I would say laundry or cleaning the kitchen is not too bad. Laundry is easy. And, in the kitchen you can feel like you are getting a lot done fast. And, as much time as I spend in the kitchen, it better stay clean!

Had a busy workday today. Then this evening had a terrible headache and didn't really get anything done as a result. I started seaming but will have to finish that tomorrow morning.
I'm off to the Strange Folk Festival tomorrow with my crafty friends. Should be loads of fun, and I will attempt to do more looking than buying. I don't plan on buying anything knitted. I would rather get something that I could not make myself. But we'll see. I'm thinking I will look for 1 or 2 things that are really neat and that will be all I get.
Quiet night last night. I finished my first sleeve of my shrug. I may have bound it off too tightly...may need to fix that. I started the other sleeve which should go fast.

This recipe from EatingWell.com, called Shrimp Bahn Mi, is an excellent quick dinner or lunch. Everyone I've made it for has enjoyed it and asks me to make it again and often. A good sandwich if you enjoy shrimp, cucumber and cilantro. I do, so I love this sandwich.

Shrimp Bahn Mi
Ingredients
1 large carrot, peeled and shredded
- 2 tablespoons rice vinegar
- 1/3 cup chopped fresh cilantro
- 2 1/2 tablespoons reduced-fat mayonnaise (DO NOT use Miracle Whip....it will ruin the recipe)
- 2 1/2 tablespoons low-fat plain yogurt
- 3/4 teaspoon fish sauce, (I have made this without fish sauce and it tasted just fine)
- 1 tablespoon lime juice
- 1/4 teaspoon cayenne pepper (be careful measuring this or it will overpower the other flavors)
- 3 12-inch baguettes, halved lengthwise
- 1 pound peeled cooked shrimp, (21-25 per pound; thawed if frozen), tails removed (see Tip)
- 18 thin slices cucumber
- 3 scallions, thinly sliced lengthwise and cut into 2-inch pieces
Preparation
- Place carrot and vinegar in a small bowl; stir to combine. Let marinate while preparing the rest of the ingredients.
- Place cilantro, mayonnaise, yogurt, fish sauce, lime juice and cayenne in a medium bowl; stir to combine. Spread 2 teaspoons of this sauce on the bottom half of each baguette. Add shrimp to the remaining sauce; toss to coat. Using a slotted spoon, divide carrot among the baguettes (discard vinegar). Top with shrimp, cucumber and scallions. Cut each baguette into two 6-inch sandwiches.
